Versatile Pineapple Filling can be use to fill cream puffs or spread on layers of pound cake.


  • 1, 13 1/2 ounce can pineapple, crushed
  • 1/3 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 egg
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla
  • 2 cups whipped topping, thawed


  1. Combine pineapple, sugar, cornstarch and salt. Cook over moderate heat, stirring constantly until mixture boils and becomes very thick. Stir a bit of hot mixture into lightly beaten egg, then combine with remaining pineapple mixture. Stir over very low heat for 1 minute.
  2. Remove from heat. Blend in lemon juice and vanilla. Cool completely. Fold in whipped topping.
