Versatile Pineapple Filling can be use to fill cream puffs or spread on layers of pound cake.
- 1, 13 1/2 ounce can pineapple, crushed
- 1/3 cup sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 1 egg
- 1 teaspoon lemon juice
- 1 teaspoon vanilla
- 2 cups whipped topping, thawed
- Combine pineapple, sugar, cornstarch and salt. Cook over moderate heat, stirring constantly until mixture boils and becomes very thick. Stir a bit of hot mixture into lightly beaten egg, then combine with remaining pineapple mixture. Stir over very low heat for 1 minute.
- Remove from heat. Blend in lemon juice and vanilla. Cool completely. Fold in whipped topping.
