A vegetarian favorite, Vermicelli Pasta Salad has a tangy dressing and lots of veggies.
- 1 package vermicelli
- 1 bunch celery, chopped
- 1 large can pimentos, chopped
- 4 jalapeno peppers
- 1 small green pepper, chopped
- 1 medium onion, grated
- 2 to 3 cups Miracle Whip
- salt and pepper to taste
- Cook vermicelli using package directions. Drain; cool.
- Combine celery, pimentos, peppers and onion in a serving bowl. Add vermicelli; mix well. Add salad dressing, salt and pepper. Cover. Refrigerate for 24 hours. Keeps well for 4 or 5 days.
