Make Veggie Medley ahead of time; it goes great with Sunday roast.

Ingredients

  • 2 cups carrots, sliced
  • 2 cups onions, sliced
  • 1/2 cup green pepper strips
  • 1 can green beans, drained
  • 3 tablespoons tapioca
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 large can tomatoes

Directions

  1. Arrange carrots, onions, green pepper and green beans in layers in buttered casserole. Combine last 5 ingredients and heat in saucepan. Pour sauce over vegetables. Bake at 350 degrees F for 2 hours.
