Make Veggie Medley ahead of time; it goes great with Sunday roast.
Ingredients
- 2 cups carrots, sliced
- 2 cups onions, sliced
- 1/2 cup green pepper strips
- 1 can green beans, drained
- 3 tablespoons tapioca
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 large can tomatoes
Directions
- Arrange carrots, onions, green pepper and green beans in layers in buttered casserole. Combine last 5 ingredients and heat in saucepan. Pour sauce over vegetables. Bake at 350 degrees F for 2 hours.
