A great complete vegetarian dinner in a crock pot.

Ingredients

  • 8 red potatoes, sliced
  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup frozen corn niblets
  • 1 cup frozen peas
  • 1 cup sliced mushrooms
  • 1 cup frozen green beans
  • SAUCE:
  • 2 1/2 cups tomato sauce,
  • 1/4 cup tamari
  • 1 tsp. thyme, ground
  • 1 tsp. dry mustard
  • 1/2 tsp. basil
  • 2 1/2 tsp. chili powder
  • 1/8 tsp. sage
  • 2 tbsp. fresh parsley, chopped
  • 1/2 teaspoon cinnamon

Directions

  1. In a crock pot layer vegetables in the order they are listed.
  2. In a bowl mix mix sauce ingredients.
  3. Pour mixture over vegetables.
  4. Cover and cook on low for 10 to 12 hours or on high for 6 to 7 hours.
