A great complete vegetarian dinner in a crock pot.
Ingredients
- 8 red potatoes, sliced
- 1 onion, sliced
- 2 carrots, sliced
- 1 green bell pepper, sliced
- 1 zucchini, sliced
- 1 cup frozen corn niblets
- 1 cup frozen peas
- 1 cup sliced mushrooms
- 1 cup frozen green beans
- SAUCE:
- 2 1/2 cups tomato sauce,
- 1/4 cup tamari
- 1 tsp. thyme, ground
- 1 tsp. dry mustard
- 1/2 tsp. basil
- 2 1/2 tsp. chili powder
- 1/8 tsp. sage
- 2 tbsp. fresh parsley, chopped
- 1/2 teaspoon cinnamon
Directions
- In a crock pot layer vegetables in the order they are listed.
- In a bowl mix mix sauce ingredients.
- Pour mixture over vegetables.
- Cover and cook on low for 10 to 12 hours or on high for 6 to 7 hours.
