A great dish for the vegetarians and a great side dish served with meat for the meat and potatoe people.
Ingredients
- 5 stalks of celery, diced
- 5 carrots cut in strips
- 1 large onion, diced
- 1 small green pepper, diced
- 1 pint tomato juice
- 4 cans green beans, drained
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 tbsp. tapioca
- 1/4 stick of butter, cut into small squares
Directions
- In a crock pot mix all ingredients except the butter.
- Drop the squares of butter over the top of the mixture.
- Cover and cook on low for 8 to 9 hours or high for 3 to 5 hours.
