Refreshing Vegetable Sandwiches are made with cucumber, tomatoes, peppers and onion.

Ingredients

  • 2 cucumbers, grated
  • 1 small onion, grated
  • 1 small bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 package unflavored gelatin
  • 1 pint mayonnaise

Directions

  1. Drain vegetables thoroughly. Soften gelatin in 1/4 cup cold water in medium bowl. Add 1/4 cup boiling water, stirring until dissolved. Stir vegetables into gelatin. Add mayonnaise, stirring to mix. Chill in airtight container overnight. Spread on hearty whole grain bread slices.
