Filled with crunchy fresh vegetables, Vegetable Salad Dressing also makes a great dip.
Ingredients
- 1 carrot, cut in pieces
- 1 onion, quartered
- 1 stalk celery, cut in pieces
- 1 clove garlic
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons vinegar
- 1 egg
- 1 cup oil
Directions
- Place all ingredients except oil in blender container. Pulse blender until vegetables are pureed. Turn blender speed to high. Add oil gradually in a thin stream, pausing occasionally to allow mixture to thicken. Place in a covered container. Refrigerate overnight to thicken and blend flavors.
