A delicious vegetarian dish,  serve Vegetable Fondue Curry with fresh vegetables.

Ingredients

  • 1 green onion, minced
  • 1/4 cup butter
  • 2 tablespoons flour
  • 1 teaspoon ginger, minced
  • 1/2 cup apple, chopped
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 4 whole cloves
  • dash of cayenne pepper
  • 2 cups milk
  • 1/2 cup moist shredded coconut
  • 1/4 cup lemon juice
  • thin cream

Directions

  1. Saute onion in butter in electric skillet until transparent. Blend in flour. Add next 7 ingredients, mixing well. Add milk gradually, stirring to blend. Cook until thick, stirring constantly. Reduce temperature to very low.
  2. Cook, covered for 30 minutes longer, stirring occasionally. Remove cloves; stir in coconut. Add lemon juice gradually, blending well.
  3. Place in fondue pot. Serve with fresh vegetables. Add cream as needed to thin fondue.
