A refreshing drink to start a lunch with.
- 3 cups unsweetened pineapple juice, chilled
- 1 carrot sliced
- 1 1/2 stalks celery, sliced
- 1/3 cucumber, peeled and sliced
- 2 slices lemon
- Combine all ingredients in a blender.
- Blend until smooth.
- Chill before serving.
- Can garnish with a small celery stalk with leaves if desired.
