Two Dollar Coffee Cake is budget friendly and easy to make.

Ingredients

  • 3/4 cup butter, softened
  • 3 eggs
  • 3 cups cake flour
  • 1/4 teaspoon salt
  • 1/2 cup pecans, chopped
  • 1 1/2 cup sugar
  • 1 lemon juiced and peel grated
  • 1 cup milk
  • 3 teaspoons baking powder

Directions

  1. Cream butter, sugar and eggs. Add lemon juice and peel. Sift in flour, salt and baking powder. Add milk and blend. Pour batter in a greased bundt pan. Sprinkle top with pecans. Bake at 350 degrees F for 1 hour.
