This French inspired Tuna Nicoise salad will add elegance to any meal.
Ingredients
- 1, 12 1/2 ounce can chunk tuna, drained
- 6 medium new potatoes, boiled and chopped
- 1, 16 ounce can green beans, drained
- 4-6 eggs, hard boiled
- 1/4 cup whole black olives
- 3 tomatoes, chopped or 1 cup cherry tomatoes
- Dressing: 1 tablespoon chopped basil
- 2 teaspoons parsley, chopped
- 1 teaspoon salt
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 cup green onions, chopped
Directions
- Combine tuna, potatoes, green onions, green beans, eggs, olives and tomatoes. Mix herbs with oil and vinegar. Toss dressing over tuna mixture. Marinate in refrigerator at least 2 hours.
