Tuna Bulgur Salad is a delicious blend of Middle Eastern flavors.
Ingredients
- 1/2 cup bulgur
- 2 cups cold water
- 1, 10 ounce package frozen baby lima beans
- 1, 7 ounce can tuna, drained
- 3 tomatoes, diced
- 1/2 cup parsley, chopped
- 3 tablespoons mayonaise
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- small romaine lettuce leaves
Directions
- In large bowl, stir bulgur with water; let stand 2 hours. Drain bulgur well.
- Prepare lima beans as package directs; drain. Place lima beans in bowl with bulgar; add tuna and remaining ingredients except romaine; mix well.
- Line platter with romaine leaves. Spoon bulgur mixture into romaine leaves. Serve salad at room temperature. Pick up salad with romaine leaves, Middle Eastern style.
