Not your momma's molasses cookies, but maybe your great-grandmother's. Thin, crispy and can be stored in the fridge for slicing and baking when convenient. Great for dipping in coffee, milk or tea!
Ingredients
- 1 cup molasses
- 1/2 pound butter
- 2 teaspoons baking soda
- 1 cup sugar
- 1/4 cup hot water
- 4 cups flour
- 2 teaspoon salt
- 2-1/4 teaspoons cinnamon
- 1-1/2 teaspoons ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon allspice
Directions
- Bring molasses just to a boil. Remove from heat.
- Stir in butter until melted.
- Add baking soda to hot water and pour into molasses.
- Put sugar into large bowl; add molasses and mix well.
- In separate bowl, combine dry ingredients. Add to molasses mixture.
- Pour into waxed or parchment paper-lined pan and refrigerate.
- Preheat oven to 325F. Cut dough very thinly and bake on greased cookie sheet for 15 minutes. Immediately remove to cooling rack.
