Not your momma's molasses cookies, but maybe your great-grandmother's. Thin, crispy and can be stored in the fridge for slicing and baking when convenient. Great for dipping in coffee, milk or tea!

  • 1 cup molasses
  • 1/2 pound butter
  • 2 teaspoons baking soda
  • 1 cup sugar
  • 1/4 cup hot water
  • 4 cups flour
  • 2 teaspoon salt
  • 2-1/4 teaspoons cinnamon
  • 1-1/2 teaspoons ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice

  1. Bring molasses just to a boil. Remove from heat.
  2. Stir in butter until melted.
  3. Add baking soda to hot water and pour into molasses.
  4. Put sugar into large bowl; add molasses and mix well.
  5. In separate bowl, combine dry ingredients. Add to molasses mixture.
  6. Pour into waxed or parchment paper-lined pan and refrigerate.
  7. Preheat oven to 325F. Cut dough very thinly and bake on greased cookie sheet for 15 minutes. Immediately remove to cooling rack.
