Ingredients
- 2 1/2-3 pound fryer chicken
- 1 1/2 teaspoons salt
- 1 1/2 teaspoon pepper
- 1 1/2 cups flour
- 1/2 cup vegetable oil
- 1/2 cup (1 stick) margarine
Directions
- Slice the chicken into serving size piece. Season with salt and pepper and then roll in the flour.
- Heat the oil and butter in a large skillet. Brown the chicken and then cover and cook on low heat for 20 minutes. Remove the cover and cook for 5 more minutes, flipping often.
