An exotic and tropical-tasting salad made with a combination of papaya, pineapple, banana, cherry, lime and coconut. Pair it with a glass of Muscat or Gewürztraminer wine.

Ingredients

  • FOR THE SALAD:
  • 1 large papaya, peeled, seeded and diced
  • 1 pineapple, peeled, cored and diced
  • 6 large bananas, peeled and sliced
  • 1 cup maraschino cherries, halved
  • 5 limes, juiced
  • Zest of 1 lime
  • 1 cup shredded coconut
  • FOR THE SAUCE:
  • 4 cups crème fraiche
  • 3 tablespoons agave or honey
  • Juice of 1 lime
  • Zest of 1 lime

Directions

  1. Place the papaya, pineapple, bananas, cherries and limes into a shallow fruit bowl and toss to combine. Add the coconut and lime zest and toss once again to coat.
  2. In another bowl, combine the crème fraiche, agave, lime juice and lime zest until thoroughly blended. Pour the dressing over the fruit mixture and gently toss to coat. Serve immediately.
