These soft and chewy oatmeal cookies are delicious! For different variations, try substituting chopped nuts, chocolate chips, M&M's, flaked coconut or cut-up dried apricots in place of raisins.

Ingredients

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup shortening
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2-1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 2 cups oatmeal

Directions

  1. Add raisins and water to saucepan and simmer on low heat. Allow to cool slightly.
  2. Combine shortening, sugar, eggs and vanilla; mix well.
  3. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon and cloves. Add to shortening mixture.
  4. Fold in oatmeal and raisins.
  5. Drop by teaspoon onto prepared cookie sheets.
  6. Bake at 375 degrees for 10-15 minutes or until slightly brown on top.
