These soft and chewy oatmeal cookies are delicious! For different variations, try substituting chopped nuts, chocolate chips, M&M's, flaked coconut or cut-up dried apricots in place of raisins.
Ingredients
- 1 cup raisins
- 1 cup water
- 3/4 cup shortening
- 1-1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 2-1/2 cups flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 2 cups oatmeal
Directions
- Add raisins and water to saucepan and simmer on low heat. Allow to cool slightly.
- Combine shortening, sugar, eggs and vanilla; mix well.
- In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon and cloves. Add to shortening mixture.
- Fold in oatmeal and raisins.
- Drop by teaspoon onto prepared cookie sheets.
- Bake at 375 degrees for 10-15 minutes or until slightly brown on top.
