Tomato Vinaigrette is a refreshing salad perfect for a hot summer's day.
- 8 ripe tomatoes, cored and sliced
- 3/4 cup vegetable oil
- 1/4 cup lemon juice
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 2 cloves garlic, crushed
- dash of salt and pepper
- 2 tablespoon fresh basil leaves, chopped
- Arrange sliced tomatoes on a large platter.
- Mix together the rest of the ingredients except basil leaves in a blender. Pour over sliced tomatoes. Sprinkle with fresh basil.
