Garden Tomato Slices with Lemon Dressing tastes great on a hot summer's day.
Ingredients
- 2 medium tomatoes
- lettuce leaves
- 1 medium lemon
- 1/3 cup olive oil
- 1 teaspoon parsley, minced
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/8 teaspoon pepper
Directions
- Slice tomatoes; arrange on lettuce leaf lined platter.
- From lemon, grate 1/2 teaspoon peel and squeeze 1 tablespoon juice.
- In small bowl with wire whisk or fork, mix lemon peel, juice, olive oil and remaining ingredients. Spoon dressing over tomatoes; cover; refrigerate.
