Tomato-Bean Stew

A healthy and vegetarian dish.

Ingredients

  • 8 oz. dried bean blend, sorted, rinsed
  • 1 stalk sliced celery
  • 1 small chopped onion
  • 3 cup water
  • 1 can whole kernel sweet corn, undrained
  • 1 pkg. taco seasoning mix
  • 1 28 oz can diced tomatoes, undrained
  • 2 tsp. sugar

Directions

  1. Combine all ingredients except tomatoes and sugar in a crock pot.
  2. Mix well.
  3. Cover and cook on low for 10 to 12 (high 5 to 6) hours or until beans are tender.
  4. Add tomatoes and sugar.
  5. Mix well.
  6. Cover and cook an additional 30 minutes or until thoroughly heated.
