Creamy tomato and rice soup.
Ingredients
- 1 pound beef stew
- 1 tablespoon shortening
- 2 cups water
- 2 cups stewed tomatoes
- 1 1/2 teaspoons pepper
- 1/2 teaspoon salt
- 3/4 cup rice, uncooked
Directions
- Brown the beef in the shortening, drain excess fat.
- Mix in the water, tomatoes, pepper and salt and bring to a boil.
- Stir in the rice and bring to a boil again. Cover and reduce to a simmer. Cook for 40 minutes.
