Tofu, Pine Nut, and Wild Rice Salad

The best tofu to use for this wild rice and pine nut salad would be marinated, and then baked or lightly fried block tofu.


  • 1 (6-ounce) box wild rice
  • 3 cups diced baked tofu
  • 1/2 cup pine nuts
  • 1/2 cup light mayonnaise
  • Sea salt and pepper, to taste


  1. Cook the rice according to package directions, fluff with a fork and then set aside to cool.
  2. In the meantime, place the pine nut in a small skillet and toast over medium heat, stirring often, until golden and fragrant.
  3. Combine the cooled wild rice, tofu, toasted pine nuts, mayonnaise and a few generous pinches of salt and pepper in a large salad bowl. Serve immediately.
