Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups oats
  • 1 cup raisins
  • 1 cup crushed toffee bits

Directions

  1. Cream butter, sugar and brown sugar.
  2. Beat in eggs and vanilla.
  3. In a separate bowl, combine flour, baking soda and cinnamon.
  4. Blend flour combination into egg mixture.
  5. Fold in oats and toffee bits.
  6. Drop by teaspoon onto greased cookie sheets.
  7. Bake at 350 degrees for 8-10 minutes.

great tasting cookie I cut the toffee from 1 cup to 3/4 cup and added 1/4 cup chocolate covered toffee for additional flavor
