Don't discard pumpkin seeds when you carve your pumpkin! They make delicious toasted pumpkin seeds which are good for you and easy to make!
- 1 cup pumpkin seeds, rinsed and dried
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- Preheat the oven to 375 F. Spread out pumpkin seeds onto a cookie sheet in a single layer and drizzle with olive oil. Sprinkle evenly with salt and pepper and toss to coat. Bake for about 8 minutes or until light brown and crispy.
