A sweet and fruity pork tenderloin over rice.

Ingredients

  • 3 pound pork tenderloins
  • 1 cup apricot preserves
  • 1/3 cup lemon juice
  • 1/3 cup ketchup
  • 1 tablespoon soy sauce
  • Rice, cooked

Directions

  1. Preheat the oven to 325 degrees Fahrenheit. Arrange the tenderloins in a roasting pan. Mix together the remaining ingredients, except for the rice, and pour over the pork.
  2. Bake covered for 1 hour and 20 minutes, basting once. Serve over the cooked rice.
