A sweet and fruity pork tenderloin over rice.
Ingredients
- 3 pound pork tenderloins
- 1 cup apricot preserves
- 1/3 cup lemon juice
- 1/3 cup ketchup
- 1 tablespoon soy sauce
- Rice, cooked
Directions
- Preheat the oven to 325 degrees Fahrenheit. Arrange the tenderloins in a roasting pan. Mix together the remaining ingredients, except for the rice, and pour over the pork.
- Bake covered for 1 hour and 20 minutes, basting once. Serve over the cooked rice.
