Tenderloin Tips A La Russe is a wonderful choice for an elegant dinner party.


  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • dash pepper
  • 2 pounds beef tenderloin tips
  • 3 tablespoons butter
  • 2 cups fresh mushrooms, sliced
  • 1/4 cup onion, finely minced
  • 3/4 cup beef consomme
  • 3/4 cup sour cream
  • 1/2 teaspoon sugar
  • 2 tablespoons parsley, finely minced
  • cooked rice


  1. Blend flour, salt and pepper. Cut beef strips about 2 inches long by 1/2 inch wide and thick. Dredge in flour mixture until uniformly coated.
  2. Melt butter in heavy skillet, add meat and brown over moderate heat, adding a bit more butter if necessary. Add mushrooms and onions; cook and stir until onion is transparent. Add consomme, cover and simmer gently until the meat is tender, about 10 to 15 minutes. Add sour cream, sugar and parsley and heat, but do not boil. Serve over rice.
