 Lamb Shanks served with new potatoes and carrots is a real celebration, slow cooked to tender perfection.

Ingredients

  • 6 small lamb shanks
  • 1/4 cup vegetable oil for frying
  • 2 onions, thinly sliced
  • 1 clove garlic, minced
  • 1 green pepper, chopped
  • 1 can tomatoes, chopped
  • 1 1/2 cups white wine
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon rosemary

Directions

  1. Brown lamb in hot oil in oven proof skillet. Season with salt and pepper.
  2. Add onions, garlic, green pepper, and tomatoes, wine and herbs.
  3. Cover and bake at 350 degrees F for 90 minutes or until lamb is tender.
