Lamb Shanks served with new potatoes and carrots is a real celebration, slow cooked to tender perfection.
Ingredients
- 6 small lamb shanks
- 1/4 cup vegetable oil for frying
- 2 onions, thinly sliced
- 1 clove garlic, minced
- 1 green pepper, chopped
- 1 can tomatoes, chopped
- 1 1/2 cups white wine
- 1/2 teaspoon curry powder
- 1/2 teaspoon oregano
- 1/2 teaspoon rosemary
Directions
- Brown lamb in hot oil in oven proof skillet. Season with salt and pepper.
- Add onions, garlic, green pepper, and tomatoes, wine and herbs.
- Cover and bake at 350 degrees F for 90 minutes or until lamb is tender.
