Tender Baked Quail

Baked, creamy quail dinner.


  • 1/2 cup margarine
  • 2 tablespoons vegetable oil
  • 1 cup flour
  • Salt and pepper to taste
  • 2 quail
  • 2 cups light cream


  1. In a large skillet heat the margarine and oil.
  2. Combine the flour, salt and pepper and coat the quail with it. Brown the quail in the skillet, remove and drain.
  3. Loosen the crumbs in the skillet and pour in the cream, stirring frequently.
  4. Add the quail back to the skillet and cover. Simmer on low heat, adding more cream as needed, until tender.
