Tender and flaky with a hit of sweetness, these Tea Biscuits are divine.
Ingredients
- 4 cups flour
- 4 eggs, separated
- 1 1/2 teaspoon vanilla
- 2 tablespoons baking powder
- 1 cup evaporated milk
- 1/2 cup cold butter, cut into pieces
- 1 cup mini chocolate chips
- 1/3 cup sugar
- 1/2 teaspoon salt
- 2 tablespoons milk
Directions
- Combine flour, sugar, baking powder and salt in a large bowl. Cut in butter with a pastry blender or two knives until mixture resembles coarse crumbs. Stir in chocolate chips.
- Beat 3 eggs, evaporated milk and vanilla in a medium bowl. Add flour mixture all at one time. Stir with a fork to form a soft dough. Turn dough onto well floured surface. Knead dough 6 to 8 times.
- Pat dough to 3/4 inch thickness. Cut dough with floured 2 1/2 inch biscuit cutter. Transfer cut dough to lightly greased baking sheet.
- Beat remaining egg and milk in small bowl. Brush egg/milk mixture over tops of biscuits. Bake at 400 degrees F for 14 to 16 minutes or until golden brown.
