Horseradish and onion give Tangy Carrot Casserole a bit of zing.

Ingredients

  • 1 cup potato chips, crushed
  • 8 medium carrots, cooked and sliced
  • 2 tablespoons onion, grated
  • 2 tablespoons horseradish
  • 1 1/2 cups mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Put a layer of potato chips in casserole; then layer of carrots. Cover with remaining ingredients and then potato chips on top. Bake at 375 degrees F for 20 minutes.
