A great replacement for your ordinary rice dish.

Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 1 tomato, chopped
  • 1/2 cup minced fresh parsley
  • 1/4 cup chopped green onions
  • 1 tablespoon minced fresh mint leaves
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Combine bulgur and water in a pan.
  2. Let stand for 1 hour.
  3. Drain.
  4. Add tomato, parsley, onions and mint leaves to bulgur.
  5. Blend mixture together.
  6. Combine lemon juice, oil, slat and pepper in a small bowl.
  7. Pour the mixture over the bulgur.
  8. Toss and mix well.
  9. Cover and refrigerate overnight.
