A great replacement for your ordinary rice dish.
Ingredients
- 1 cup bulgur wheat
- 2 cups boiling water
- 1 tomato, chopped
- 1/2 cup minced fresh parsley
- 1/4 cup chopped green onions
- 1 tablespoon minced fresh mint leaves
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Combine bulgur and water in a pan.
- Let stand for 1 hour.
- Drain.
- Add tomato, parsley, onions and mint leaves to bulgur.
- Blend mixture together.
- Combine lemon juice, oil, slat and pepper in a small bowl.
- Pour the mixture over the bulgur.
- Toss and mix well.
- Cover and refrigerate overnight.
