Swiss Lorraine Quiche is a classic that tastes great for brunch or dinner.
Ingredients
- 1 unbaked pie shell
- 1/2 pound bacon, cooked crisped and crumbled
- 1/2 cup onion, chopped
- 1 tablespoon butter
- 4 eggs
- 2 cups evaporated milk
- 1 teaspoon salt
- 1, 8 ounce package Swiss cheese, shredded
- dash cayenne pepper
Directions
- Saute onion in butter for 5 minutes. Mix eggs, evaporated milk, salt and cheese. Add onion.
- Sprinkle bacon on the bottom of pie crust. Pour egg mixture over and bake 10 minutes at 450 degrees F. Then reduce heat to 325 degrees F and cook until firm, about 30 minutes. Sprinkle with cayenne before baking.
