Swiss Lorraine Quiche is a classic that tastes great for brunch or dinner.

Ingredients

  • 1 unbaked pie shell
  • 1/2 pound bacon, cooked crisped and crumbled
  • 1/2 cup onion, chopped
  • 1 tablespoon butter
  • 4 eggs
  • 2 cups evaporated milk
  • 1 teaspoon salt
  • 1, 8 ounce package Swiss cheese, shredded
  • dash cayenne pepper

Directions

  1. Saute onion in butter for 5 minutes. Mix eggs, evaporated milk, salt and cheese. Add onion.
  2. Sprinkle bacon on the bottom of pie crust. Pour egg mixture over and bake 10 minutes at 450 degrees F. Then reduce heat to 325 degrees F and cook until firm, about 30 minutes. Sprinkle with cayenne before baking.
