These sweet muffins serve well alongside many breakfast dishes. Also ideal as a grab-and-go breakfast snack.
Ingredients
- 2-1/4 cups flour
- 1 cup sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1/4 cup sour milk
- 2 eggs
- 1-1/2 cups grated zucchini
- 1 teaspoon vanilla
- 1/2 cup chopped nuts
- 1/4 cup brown sugar
Directions
- Combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
- Beat eggs, milk, vanilla and shortening.
- Blend flour combination into egg mixture.
- Fold in zucchini and nuts.
- Pour batter into greased muffin tins.
- Sprinkle tops with brown sugar.
- Bake at 350 degrees for 15-20 minutes.
