These sweet muffins serve well alongside many breakfast dishes. Also ideal as a grab-and-go breakfast snack.

Ingredients

  • 2-1/4 cups flour
  • 1 cup sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1/4 cup sour milk
  • 2 eggs
  • 1-1/2 cups grated zucchini
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts
  • 1/4 cup brown sugar

Directions

  1. Combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
  2. Beat eggs, milk, vanilla and shortening.
  3. Blend flour combination into egg mixture.
  4. Fold in zucchini and nuts.
  5. Pour batter into greased muffin tins.
  6. Sprinkle tops with brown sugar.
  7. Bake at 350 degrees for 15-20 minutes.
