Shoepeg corn is known for its extra sweet flavor. Make this dip one day in advance so the flavors can really meld together.

Ingredients

8 ounces Cream Cheese
8 ounces Sour Cream
4 ounces Mayonnaise
1 Packet Ranch Dip
8 ounces Fire Roasted Salsa
1 Jalapeño, chopped
1 bunch chopped Scallions
2 Cans Shoepeg Corn
Cilantro, coarsely chopped
Grape Tomatoes, halved

Directions

In a medium bowl, mix together the cream cheese, sour cream, mayonnaise, Ranch dip packet and the salsa until well combined.
Stir in the Jalapeño, Scallions, Corn, cilantro and tomatoes.
Transfer the mixture into a dip bowl and serve with tortilla chips.
