These sweet muffins make an excellent breakfast treat, especially served alongside a hot cup of coffee.
Ingredients
- 2 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup half-and-half
- 1/2 cup butter, melted
- 1 teaspoon vanilla
- 2 eggs
- 1 cup fresh raspberries
Directions
- Combine flour, sugar, baking powder and salt.
- In a separate bowl, mix together half-and-half, butter, vanilla and eggs. Blend into flour combination. Gently fold in raspberries.
- Pour batter into a prepared muffin tin. Bake at 425 degrees F for 18-25 minutes.
