A classic holiday dessert treat, Sweet Potato Pecan Pie can be served with whipped cream or vanilla ice cream.
Ingredients
- 1, 9-inch unbaked pie crust
- 1 cup of cooked, mashed sweet potatoes
- 1 tablespoon of butter
- 1/4 cup of light brown sugar, firmly packed
- 1 tablespoon of vanilla
- 1/4 teaspoon of cinnamon
- Freshly grated nutmeg, to taste
- 1/8 teaspoon of allspice
- 1/4 teaspoon of salt
- 2 eggs, beaten
- 2 tablespoons of sugar
- 1 tablespoon of whipping cream
- 1/2 cup of chopped pecans
- 3/4 cup of granulated sugar
- 2 eggs
- 3/4 cup of dark corn syrup
- 1-1/2 tablespoons melted margarine
- Pinch of salt
- Pinch of cinnamon
- 2 teaspoons of vanilla
Directions
- Preheat your oven to 300 degrees. Combine potatoes, butter, brown sugar, vanilla, spices, beaten egg, sugar and cream and beat at medium speed until the mixture is smooth.
- Spread the mixture on the bottom of the pie crust and sprinkle with pecans.
- Combine 3/4 cup of sugar, 2 eggs, corn syrup, melted margarine, salt, cinnamon and vanilla and beat well. Pour the mixture over the pecans.
- Bake for 1-1/2 hours. Cool and serve slices topped with whipped cream or vanilla ice cream.
