A classic holiday dessert treat, Sweet Potato Pecan Pie can be served with whipped cream or vanilla ice cream.

Ingredients

  • 1, 9-inch unbaked pie crust
  • 1 cup of cooked, mashed sweet potatoes
  • 1 tablespoon of butter
  • 1/4 cup of light brown sugar, firmly packed
  • 1 tablespoon of vanilla
  • 1/4 teaspoon of cinnamon
  • Freshly grated nutmeg, to taste
  • 1/8 teaspoon of allspice
  • 1/4 teaspoon of salt
  • 2 eggs, beaten
  • 2 tablespoons of sugar
  • 1 tablespoon of whipping cream
  • 1/2 cup of chopped pecans
  • 3/4 cup of granulated sugar
  • 2 eggs
  • 3/4 cup of dark corn syrup
  • 1-1/2 tablespoons melted margarine
  • Pinch of salt
  • Pinch of cinnamon
  • 2 teaspoons of vanilla

Directions

  1. Preheat your oven to 300 degrees. Combine potatoes, butter, brown sugar, vanilla, spices, beaten egg, sugar and cream and beat at medium speed until the mixture is smooth.
  2. Spread the mixture on the bottom of the pie crust and sprinkle with pecans.
  3. Combine 3/4 cup of sugar, 2 eggs, corn syrup, melted margarine, salt, cinnamon and vanilla and beat well. Pour the mixture over the pecans.
  4. Bake for 1-1/2 hours. Cool and serve slices topped with whipped cream or vanilla ice cream.
