Classic sweet potato dish topped with marshmallows.
Ingredients
- 6 sweet potatoes
- 1 1/4 cups butter
- pinch of salt
- 2 teaspoons cinnamon
- 1 cup brown sugar
- 1/2 teaspoon vanilla
- 1/2 teaspoon nutmeg
- 1/3 cup apricot brandy
- 1 cup chopped pecans
- 14 large marshmallows
Directions
- Grease the potato skins and bake in a shallow pan at 325 degrees Fahrenheit until they are soft. Cool.
- Peel the potatoes and mash along with the remaining ingredients, except the pecans and marshmallows. Mix until smooth. Pour into a baking dish and refrigerate overnight.
- Preheat oven to 350 degrees Fahrenheit. Bake potato dish for 25 minutes. Remove and fold in the pecans, top with the marshmallows. Bake for 10-12 more minutes, or until marshmallows are browned.
