Classic sweet potato dish topped with marshmallows.

Ingredients

  • 6 sweet potatoes
  • 1 1/4 cups butter
  • pinch of salt
  • 2 teaspoons cinnamon
  • 1 cup brown sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/3 cup apricot brandy
  • 1 cup chopped pecans
  • 14 large marshmallows

Directions

  1. Grease the potato skins and bake in a shallow pan at 325 degrees Fahrenheit until they are soft. Cool.
  2. Peel the potatoes and mash along with the remaining ingredients, except the pecans and marshmallows. Mix until smooth. Pour into a baking dish and refrigerate overnight.
  3. Preheat oven to 350 degrees Fahrenheit. Bake potato dish for 25 minutes. Remove and fold in the pecans, top with the marshmallows. Bake for 10-12 more minutes, or until marshmallows are browned.
