This recipe can be used to make an apple cake by using 2 peeled and grated apples instead of carrots.

Ingredients

  • 1/2 cup brown sugar
  • 2 eggs
  • 3/4 cup vegetable oil
  • 3/4 teaspoon salt
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1-1/2 cups grated carrots
  • 3/4 cup chopped nuts
  • 1 teaspoon grated orange rind
  • 1 teaspoon grated lemon rind

Directions

  1. Preheat oven to 350 degrees.
  2. Beat sugar, eggs and vegetable oil.
  3. In a separate bowl, combine salt, flour, baking soda and cinnamon; add to sugar mixture.
  4. Fold in carrots, walnuts, orange and lemon rinds.
  5. Pour batter into a prepared baking dish.
  6. Bake at 350 degrees for 30 minutes.
