These fiber-filled muffins are actually quite delicious and easy to make. Consider adding raisins, chopped dates or apricots to the mix to add extra flavor.
Ingredients
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons brown sugar
- 1 cup natural bran
- 1 egg
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 tablespoons molasses
- 1 apple, finely chopped
Directions
- Combine flour, baking soda, baking powder, bran, salt and sugar; set aside.
- Beat egg, buttermilk, vegetable oil and molasses.
- Blend flour combination into buttermilk mixture.
- Fold in chopped apple.
- Pour batter into a greased muffin tin.
- Bake at 400 degrees for 15 minutes.
