Swedish Nut Cake is frosted with a creamy cream cheese frosting.
Ingredients
- 1 cup nuts, chopped
- 2 teaspoons vanilla extract
- 1-3/4 cups sugar
- 2 cups flour
- 2 teaspoon soda
- 2 eggs
- 1 (10 ounce) can crushed pineapple
- 1 (8 ounce) package cream cheese, softened
- 1-3/4 cups confectioners' sugar
- 1 stick margarine, softened
Directions
- Combine 1/2 cup nuts, 1 teaspoon vanilla and next 5 ingredients in a large bowl, mixing well. Pour into a greased and floured 9 x 13-inch baking pan.
- Bake at 350 degrees F for 40 to 45 minutes.
- Combine remaining 1 teaspoon vanilla and next 3 ingredients in bowl, beating until creamy. Frost cooled cake. Sprinkle with remaining 1/2 cup nuts.
