Swedish Nut Cake is frosted with a creamy cream cheese frosting.

Ingredients

  • 1 cup nuts, chopped
  • 2 teaspoons vanilla extract
  • 1-3/4 cups sugar
  • 2 cups flour
  • 2 teaspoon soda
  • 2 eggs
  • 1 (10 ounce) can crushed pineapple
  • 1 (8 ounce) package cream cheese, softened
  • 1-3/4 cups confectioners' sugar
  • 1 stick margarine, softened

Directions

  1. Combine 1/2 cup nuts, 1 teaspoon vanilla and next 5 ingredients in a large bowl, mixing well. Pour into a greased and floured 9 x 13-inch baking pan.
  2. Bake at 350 degrees F for 40 to 45 minutes.
  3. Combine remaining 1 teaspoon vanilla and next 3 ingredients in bowl, beating until creamy. Frost cooled cake. Sprinkle with remaining 1/2 cup nuts.
