Super Salmon Patties served with a tossed green salad makes a wonderful light lunch.
Ingredients
- 1 pound can salmon, bones removed and drained
- 2 eggs, beaten slightly
- 1 cup cracker crumbs
- salt and pepper to taste
- 1 tablespoon lemon juice
- 3 tablespoons butter
Directions
- Mix ingredients together. Press into patties and fry in butter until brown.
