Super Salmon Patties served with a tossed green salad makes a wonderful light lunch.

Ingredients

  • 1 pound can salmon, bones removed and drained
  • 2 eggs, beaten slightly
  • 1 cup cracker crumbs
  • salt and pepper to taste
  • 1 tablespoon lemon juice
  • 3 tablespoons butter

Directions

  1. Mix ingredients together. Press into patties and fry in butter until brown.
