A creamy and cheesy cooked vegetable medley side dish.

Ingredients

  • 2 pounds medium yellow squash, sliced
  • 2 onions, coarsely chopped
  • 3 ribs celery, diagonally sliced
  • 1 green bell pepper, seeded and julienned
  • 1 (8 ounce) package cream cheese, cubed
  • 1 teaspoon sugar
  • 1/4 cup butter, melted
  • 1 (10 ounce) can cheddar cheese soup
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1-1/2 cups seasoned breadcrumbs

Directions

  1. Mix everything but the breadcrumbs together in a greased slow cooker. Cook covered for 3-4 hours on low. Sprinkle the breadcrumbs over top to serve.
