Sunshine Breakfast Muffins

These dried cranberry and orange muffins are great served for breakfast with a pat of butter.


  • 1 seedless orange
  • 1/2 cup orange juice
  • 1/4 cup oil
  • 1 1/2 cups flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup chopped dried cranberries
  • 1 egg
  • 1 teaspoon salt
  • Nonstick spray


  1. Preheat the oven to 375 degrees and coat a 12-muffin tin with nonstick spray.
  2. Place the orange, orange juice, egg, and oil into a blender and blend on high until mixture is smooth.
  3. Put the flour, sugar, baking powder, baking soda, and salt into a large bowl and whisk to combine. Make a well in the center of the flour mixture and add the orange mixture; stir to combine.
  4. Fold in the cranberries and then pour the batter into the prepared muffin tin. Place in the oven for 20 minutes until golden.
