These dried cranberry and orange muffins are great served for breakfast with a pat of butter.
Ingredients
- 1 seedless orange
- 1/2 cup orange juice
- 1/4 cup oil
- 1 1/2 cups flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup chopped dried cranberries
- 1 egg
- 1 teaspoon salt
- Nonstick spray
Directions
- Preheat the oven to 375 degrees and coat a 12-muffin tin with nonstick spray.
- Place the orange, orange juice, egg, and oil into a blender and blend on high until mixture is smooth.
- Put the flour, sugar, baking powder, baking soda, and salt into a large bowl and whisk to combine. Make a well in the center of the flour mixture and add the orange mixture; stir to combine.
- Fold in the cranberries and then pour the batter into the prepared muffin tin. Place in the oven for 20 minutes until golden.
