Tomato salad is a treat reserved only for summer. It’s supper quick and easy to make, but works only with the freshest tomatoes. It’s even more beautiful when made with a variety of tomatoes, especially of different colors, but if you only have one type on hand it’ll still be delicious.
Ingredients
- 4-5 tomatoes
- 8 ounces mozzarella cheese
- Fresh basil leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- Salt and pepper
Directions
- Core and cut tomatoes into thick slices, place in a large bowl.
- Cube mozzarella cheese and add to the tomatoes.
- Add remaining ingredients and toss to coat.
- Serve immediately or chill.
