A twist on a spring and summertime favorite. This no-lettuce salad makes a delicious side dish or dessert.
Ingredients
- 16 ounces fresh strawberries
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 10-15 mint leaves, chopped
- 1/4 cup feta (optional)
- 1/2 cup sliced almonds (optional)
Directions
- Rinse, hull and quarter the strawberries. Set aside.
- Combine mint, balsamic, honey and lemon. Mix in chopped mint.
- Toss berries in balsamic mixture. Before serving, mix in feta and sliced almonds.
