Summer salads are fresh, simple and always delicious. Dress this one up with a simple lemon and garlic vinaigrette.


  • 2 Avocados peeled and diced
  • 1 cucumber
  • 3 tomatoes
  • 2 tablespoons black olives
  • 1/2 red onion sliced
  • 1/4 preserved lemon, diced


  1. Cut the tomato into wedges and slice the cucumbers; put into a salad bowl.
  2. Add the avocado, olives, onion and preserved lemon, and then gently toss to combine.
  3. Drizzle with a simple lemon and garlic vinaigrette and serve immediately.
