A delicious side dish to serve at a barbeque or picnic, this simple pasta is light and creamy with a hint of tang from the addition of Greek yogurt.

Ingredients

  • 2 cups shaped fusilli
  • 1 cup broccoli florets
  • 2 tomatoes, sliced in chunks
  • 1 cup sliced cucumber
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon mustard
  • 1 teaspoon dried basil
  • sea salt and freshly ground pepper to taste

Directions

  1. Cook the pasta according to package directions, drain, cool to room temperature, and then place in the refrigerator until chilled.
  2. Fill a small pan 1/2-full with lightly salted water and bring to a boil. Once boiling, add the broccoli florets and then return to a boil. Drain the broccoli, cool to room temperature, and then place in the refrigerator until chilled.
  3. Place the mayonnaise, yogurt and mustard in a large bowl, add a few pinches of salt and pepper, along with the basil, and mix until thoroughly blended. Add the chilled pasta, broccoli, tomato and cucumber to the bowl and gently toss to coat.
