Ingredients

  • 3/4 cup canned pumpkin
  • 1 cup Splenda
  • 1/8 cup of skim milk
  • 2 tablespoons canola oil
  • 3 tablespoons molasses
  • 2 eggs
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375 degrees
  2. Spray muffin tin with cooking spray or line with paper muffin liners
  3. Stir wet ingredients together in medium bowl
  4. Combine dry ingredients in large bowl
  5. Add wet ingredient mixture to dry ingredients and stir until just mixed.
  6. Pour into muffin cups
  7. Bake for 20 minutes
