Stuffed Squash

Southern stuffed squash and sauce recipe.


  • 3 yellow squash
  • 2 1/2 cups water
  • 2 teaspoons salt
  • 1 tablespoon bacon drippings
  • 1 garlic clove, crushed
  • 1/2 pound ground beef
  • 1/2 cup rice, uncooked
  • 1/2 teaspoon pepper
  • 2 cups tomatoes, stewed
  • Sauce Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper
  • 1 cup milk
  • 1/4 cup cheese


  1. Slice the squash lengthwise. Remove the seeds.
  2. In a large heavy pot bring 2 cups of water and 1 teaspoon salt to a boil. Place the squash, cut side down, and cook over medium heat for 5 minutes, or until tender. Remove and drain.
  3. In a heavy skillet heat the bacon drippings. Stir in the garlic and ground beef and brown, about 10 minutes. Add in the rice, salt, pepper, tomatoes and 1/2 cup water. Cover and cook over low heat for 20 minutes, until liquid is absorbed.
  4. Fill the squash halves with the beef mixture and arrange in a baking dish.
  5. To prepare the sauce: Melt the butter in a saucepan. Add in the flour, mustard, salt, pepper and milk. Bring to a boil, stir until thickened. Reduce the heat and add the cheese. Cook until the cheese has melted and the mixture is smooth.
  6. Pour half of the sauce over the squash. Bake for 15-20 minutes. Add the remaining sauce prior to serving.
