Stuffed Acorn Squash is stuffed with sausage and can be used as a main dish.

Ingredients

  • 2 acorn squash
  • 1 pound bulk pork sausage
  • 1 small onion (grated)
  • 1 1/2 cups soft bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Half squash and remove seeds
  2. Place squash cut side up in greased baking dish with 1/2 inch of water and cook covered at 400 degrees for about 20 minutes
  3. Fry sausage, drain fat and add remaining ingredients.
  4. Remove sausage from oven and fill halves with sausage mixture
  5. Bake uncovered for 30 more minutes
