Stuffed Acorn Squash is stuffed with sausage and can be used as a main dish.
Ingredients
- 2 acorn squash
- 1 pound bulk pork sausage
- 1 small onion (grated)
- 1 1/2 cups soft bread crumbs
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Half squash and remove seeds
- Place squash cut side up in greased baking dish with 1/2 inch of water and cook covered at 400 degrees for about 20 minutes
- Fry sausage, drain fat and add remaining ingredients.
- Remove sausage from oven and fill halves with sausage mixture
- Bake uncovered for 30 more minutes
