Refreshing and different Strawberry Soup makes a sweet first course.
- 2 pints fresh strawberries, cleaned and halved
- 1 cup orange juice
- 1 tablespoon cornstarch
- 1 cup rose or blush wine
- 1/2 cup sugar
- sour cream
- 6 small, whole strawberries for garnish
- Puree strawberries in food processor and set aside. Combine 1/4 cup orange juice and cornstarch in saucepan on low heat. Add the rest of the orange juice and wine and sugar and bring mixture to a boil. Remove from heat immediately. Combine with pureed strawberries and chill.
- Serve in small bowls and top with a dollop of sour cream and a small berry.
